    Carrageenan: Carrageenans or carrageenins - karr-ə-gee-nənz, from Irish carraigín, "little rock"- are a family of linear sulfated polysaccharides that are extracted from red edible seaweeds. They are widely used in the food industry, for their gelling, thickening, and stabilizing properties. Their main application is in dairy and meat products, due to their strong binding to food proteins. There are three main varieties of carrageenan, which differ in their degree of sulfation. Kappa-carrageenan has one sulfate group per disaccharide, iota-carrageenan has two, and lambda-carrageenan has three. Gelatinous extracts of the Chondrus crispus -Irish moss- seaweed have been used as food additives since approximately the fifteenth century. Carrageenan is a vegetarian and vegan alternative to gelatin in some applications or may be used to replace gelatin in confectionery.

    Celuloza: Celuloza -lat. cellula: mala ćelija- je u prirodi najrasprostranjeniji ugljikov spoj na Zemlji. To je ugljikohidrat -polisaharid- s velikom relativnom molekularnom masom. Većinom se nalazi u obliku vlakana, koja su vrlo čvrsta, netopljiva u vodi, slabim kiselinama i lužinama, te u organskim otapalima. Celuloza nastaje u prirodi fotosintezom i čini gotovo polovinu tvari od koje su građene stijene stanica u drveću i jednogodišnjim biljkama. Za proizvodnju papira upotrebljava se takozvana tehnička celuloza, koja osim čiste celuloze sadrži manji ili veći udjel hemiceluloze i lignina, te neznatne količine smole, voskova i mineralnih tvari. Celuloza je bijela vlaknasta tvar bez okusa i mirisa, netopljiva u vodi i organskim otapalima, glavni sastojak staničnih stijenki biljaka. Udio je celuloze u pamuku do 98%, u drvu 40 do 50%, u slami oko 30%. Celuloza je osnovni sastojak mnogih danas nezamjenljivih industrijskih proizvoda: papira, kartona, ljepenke, vate i celuloznih vlakana za tekstilnu industriju, a široku primjenu nalaze i njezini derivati -esteri i eteri- u proizvodnji lakova, eksploziva, ljepila, filmskih vrpci, celuloida i drugog. Celuloza je polisaharid s bruto jednadžbom -C6H10O5-n, pri čemu je n stupanj polimerizacije, koji za pamuk približno iznosi 7 000, a za jelovo drvo 2 500. Lančane molekule celuloze građene su od glikozidički povezanih molekula glukoze, a obradom kiselinama celuloza se hidrolitički razgrađuje. Kemijskom reakcijom dušične i sumporne kiseline s celulozom nastaje celulozni nitrat --poznat i pod nazivom nitroceluloza--, a djelovanjem anhidrida octene kiseline acetilceluloza. Mnoge životinje probavljaju celulozu s pomoću enzima celulaze i hemicelulaze. U crijevima sisavaca celuloza se razgrađuje djelovanjem enzima bakterijske crijevne flore i raznih praživotinja. Preživači i konji probave 30 do 75% celuloze, a mesožderne je životinje uopće ne mogu probaviti, kao ni čovjek, jer nema enzima potrebnih za njezinu razgradnju. Celuloze ima najviše u voću i povrću i vrlo je važan udio prehrane.

    Sucralose: Sucralose is an artificial sweetener and sugar substitute. The majority of ingested sucralose is not broken down by the body, so it is noncaloric. In the European Union, it is also known under the E number E955. It is produced by chlorination of sucrose. Sucralose is about 320 to 1‚000 times sweeter than sucrose, three times as sweet as both aspartame and acesulfame potassium, and twice as sweet as sodium saccharin. Evidence of benefit is lacking for long-term weight loss with some data supporting weight gain and heart disease risks.It is stable under heat and over a broad range of pH conditions. Therefore, it can be used in baking or in products that require a long shelf life. The commercial success of sucralose-based products stems from its favorable comparison to other low-calorie sweeteners in terms of taste, stability, and safety. Common brand names of sucralose-based sweeteners are Splenda, Zerocal, Sukrana, SucraPlus, Candys, Cukren, and Nevella. Canderel Yellow also contains sucralose, but the original Canderel and Green Canderel do not.
